Recipe for a really good Asian inspired cucumber salad

Here I’ve paired my cucumber and radishes salad with some leftover Chinese take out—adds some crunch and makes it a little healthier :)

I love making this cucumber salad because it all comes together so quickly, there’s no cook time that I have to wait for and it satisfies my craving for a really nice crunchy snack or side dish.

It’s just some cucumbers (and radishes—my spin) sliced thin and mixed with a clove or two of minced garlic and a spoon of chili oil. You can also add a tablespoon of sesame oil and a splash of rice vinegar. Season with salt if you need. It’s so easy and you can add in however much you like and adjust it all accordingly.
