Rice Noodles with Peanut Sauce

POV: You’re hungry and want something Asian-y to eat in 20 minutes. Look no further!

What you need (for 4+ servings -it’s good cold the next day too!)

Noodle:

1 pack of rice noodles

Sauce:

2 tablespoons peanut butter

1 tablespoon gochujang

1 tablespoon hoisin sauce

1 teaspoon sesame oil

½ tablespoon of soy sauce

1 tablespoon of sriracha

½ tablespoon chili oil

Quick drizzle of honey

1 cup of coconut milk

Sautéed Cabbage:

1 head of cabbage

Drizzle of sesame oil

Drizzle of soy sauce

1 inch of ginger grated

2-3 garlic cloves minced

Begin by adding the ginger, garlic, soy sauce and sesame oil to a large wok or pan over medium heat. Let them heat for about 5 minutes and add the (super thin sliced) cabbage. Cover the pan and let steam until were ready to use (about 15 minutes).

In the meantime make the noodles according to the package. This is generally just hot water poured over them and soaked for about 5 minutes.

Give the cabbage a quick stir, then make the peanut sauce in a medium sized bowl. Add all the sauce ingredients and give it a good mix until it’s creamy. Add the sauce to the noodles. Optional to leave a couple of spoons of sauce aside if you want to top it with extra sauce on your plate—the noodles will soak it up!!

Add the cabbage to the noodles, toss all together and serve!

I like to slice avocado, green onions, cucumber, carrots, cilantro and sprinkle black sesame on top. And the optional sauce if you set it aside earlier. Enjoy!

Ps. You could add shrimp skewers or chicken slices to make it a bigger more filling meal.
