Simple and nutritious warm summer breakfast


If you’ve been here for a bit you know that I love, and have been a bit obsessed with, brown butter protein oats with pears throughout the past fall and winter.

Well I have my stove again which means I have been experimenting with a summer version. Can probably be done with just about any fruit that you have but I had some strawberries and cherries that were going bad.

This has plenty of protein, healthy fats and vitamins.

This recipe is for 1-2 people (If making for 1 you’ll have yummy leftovers or a snack for later)

What you need:

Handful of fruits

1 cup oats

1 cup water

4 egg whites (save the yolks for my ice cream recipe!)

2-3 tablespoons brown sugar

1 tablespoon real grass fed butter

1-2 teaspoons vanilla bean paste

1 -2 tablespoons collagen powder (optional)

Take the oats and water and heat over medium temperature in a pot until the water is almost all soaked up. Then add the 4 egg whites while stirring the entire time. Keep stirring until it is creamy and turn off the heat.

In the meantime, take the brown sugar and place in a small pan over medium to low heat. Slice up the strawberries and cherries and put over the sugar until everything is slightly saucy and the sugar is all melted.

Put the oats in the bowls and top with the berry mixture with the liquid. Top with a little piece of butter, vanilla paste and some collagen powder if you’re using. Top with nuts and seeds or goji berries.

Eat warm.
